Food extrusion is widely applied in processing industries. The process involves forcing through a perforated plate or die, a set of mixed ingredients. They are then cut into specified sizes by blades. An extruder is the machine which forces the mix through the plate.Extrudate is the mix. This technology dates back to 1870s when the first extruder was designed to manufacture sausages. Through the 1930s, breakfast cereals and dry pasta were mostly produced via extrusion. This technique was later used in kitchen appliances like coffee grinders and even pasta makers.
