Cold extrusion technology
This process produces high-density, high-moisture foods such as muffins, cookies or candies without raising the temperature of the food. The process is often used in food processing plants to make pasta.
During the cold extrusion process, the food is heated to a maximum of 100 degrees Celsius. Cold extrusion can be used to maintain a stable food temperature during the forming and mixing of foods, including meat products and pasta.
Low-pressure extrusion can also be performed at temperatures below 100 degrees Celsius. Due to high-temperature cooking during conventional extrusion, whey proteins may change color due to the Maillard reaction, proteins may racemize during cross-linking, sulfur-containing amino acids, methionine and cysteine may be destroyed, and some other problems. Cold extruders are suitable for homes and small businesses. Due to their high prices, extrusion cooking machines are only used by large businesses.
