Afterward, the soybeans are cooked, and the proteins denature, causing the soy protein to coagulate and create a meat-like texture. The cooked soybean mass then enters the screw conveyor, which eliminates water from the soybean meat, drying out and hardening it. The last step is to use a pelletizer to cut the meat into various shapes and sizes before being packaged.
