The conditions in the barrel have both positive and negative effects on the nutritional content of the extrudate. The physical properties of the extrudate are closely related to the physicochemical properties of the raw materials and the extrusion process variables. Materials with low protein content (high starch content) tend to form low-density puffed products, while materials with high protein content (low starch content) tend to form products with a denser texture.

For the preparation of puffed cereals, a starch concentration of at least 60-70% is recommended. Depending on the moisture content, barrel temperature, screw configuration (soft or hard) and speed, die size and geometry, puffed products (e.g., puffed cereals) or low-moisture shaped products (e.g., pellets) can be manufactured.
